Banjaraa is the creation of Ajay Sabharwal - in 2016, he set up a stall at his kids’ summer fete with about 100 lamb samosas, and sold out in about half an hour. This led to more festivals, events and Christmas fayres, under the name ‘Snacks by AJ’. In 2018 the horsebox was made and Banjaraa was created. The name comes from a famous Rajasthani nomadic tribe - Ajay chose the name to represent the nomadic nature of a food truck, and the variety of flavours served from it.

The motto for Ajay’s food is ‘Twisted Indian Food’. Big, bold flavours with simple ingredients and no rubbish. He describes it as ‘the kind of food I feed my kids’. The main attractions are the Indian-Inspired wraps and rice bowls. With fillings such as Chilli Paneer, Lamb Keema Masala, Mushroom Masala, and Aloo Chole, there’s something for everyone regardless of diet. After the interview, Ajay showed us the latest creation he’s working on; Indian brioche sandwiches. The sweet buns with the spicy flavourful fillings are a surprisingly good match. Ajay has some big plans for the future of Banjaraa; it’ll be exciting to see what comes next.
